4 Ways To Enjoy Watermelon

It's National Watermelon Day! So if you're looking for some unique ways to enjoy this treat check out these recipes below:

Watermelon-ade Pops

If a slice of watermelon and a glass of cold lemonade are your idea of summertime refreshment, then you won't want to miss this icy treat.

Keep a batch in your freezer for cooling off with on the hottest days of the year

  • 3 cups seedless watermelon, cubed
  • ½ cup lemonade
  • ½ cup orange juice
  • 1 cup lemon yogurt

Puree the watermelon in a blender or food processor. Add the lemonade, orange juice and yogurt and mix well. Pour the mixture into ice pop molds, and freeze until solid.

To remove the pops, run warm water over the molds until you can gently wiggle the pops out.

Fruit Gazpacho

A chilled fruit soup is the perfect way to start your day. With the yogurt and honey mixture on top, this is a refreshing dish for breakfast, a sweet dessert or an anytime snack. You can easily substitute your favorite fruits here as well, though the cantaloupe is the perfect fruit to keep the soup-like consistency.

Ingredients

  • Six cups cantaloupe, peeled and seeded and cut up into small pieces
  • One cup strawberries, stemmed and chopped
  • One peach, diced and seeded
  • Half-cup blueberries
  • Half-cup plain yogurt
  • One tablespoon fresh mint, finely chopped
  • One tablespoon honey

Directions

  1. In a food processor, puree the cantaloupe chunks until smooth.
  2. In a separate bowl mix the remaining fruit and the mind together.
  3. In another separate bowl blend the yogurt and honey.
  4. Pour the blended cantaloupe puree into a bowl, top with the additional fruit and the yogurt-honey mixture.

Margaritas

The beauty of margaritas is that you can make them with just about any fruit, including watermelon (just make sure they're seedless). Combine your fruit of choice along with 3 parts lime juice, 1 1/2 parts St. Germain Elderflower liqueur, 6 parts tequila, dash of salt, and at least 4 cups of fruit and blend well in a blender. If you don't want any chunks of fruit, you can strain the concoction, but chunks of fruit, like mangos, can be quite a tasty treat, too.

Cumin Spice Shrimp with Grilled Watermelon Salsa [by Chef Jessica Swift]

Shrimp Ingredients:

  • 1 lb. shrimp, peeled and deveined
  • 1 t. cumin, ground
  • 1/2 t. oregano
  • 1/4 t. each (coriander, crushed red pepper, granulated garlic, black pepper)
  • Dash of salt
  • 1 t. of olive oil
  • Juice of 1/2 lime
  • 1/2 t. each (mint, basil) chopped

Salsa Ingredients:

  • 2 1-inch slices of watermelon (approximately 5 inches in diameter)
  • 1/2 small red onion, diced
  • 2 ears of fresh corn, husked
  • 1 T. each (cilantro, mint, basil)
  • Juice of one lime
  • 2 garlic cloves, minced
  • 1/2 jalapeño, minced – may use whole jalapeño if you prefer more spice
  • Salt and pepper to taste

Directions:

  1. For shrimp – combine all spices in a medium bowl, add shrimp and olive oil. Make sure shrimp is fully coated and place in fridge and let marinate for 30 minutes.
  2. Meanwhile, heat grill pan over medium-high heat and spray with oil. Grill corn 7 minutes per side, kernels should start to brown. Remove and allow to cool. Cut corn off of the cob and place in bowl.
  3. Grill watermelon slices 2-3 minutes per side. Let cool for 15 minutes, then dice.
  4. Place watermelon in bowl with corn and add remaining ingredients, stir, cover and refrigerate at least 30 minutes.
  5. Spray grill with oil and grill shrimp over medium high heat 2 minutes per side or until shrimp turns pink.
  6. Place in bowl and toss shrimp with lime, mint and basil. Serve shrimp with salsa.
